Roasted Cauliflower, Cashew, Cranberry, Capers


Option 1 Hot Side

  • Preheat oven to 180°C
  • Remove lid from cauliflower tray and roast for 10 minutes until warm
  • To plate, smear cashew cream on bottom of serving plate. Place cauliflower on top. Add cranberry and cashew mixture

Roasted Cauliflower

  • Option 2 Cauliflower salad

    • Place cauliflower in large mixing bowl
    • Add a little olive/vegetable oil to cashew cream to create dressing.
    • Mix dressing and cashew cranberry mixture into cauliflower.
    • Transfer to serving plate or bowl
