Roasted Cauliflower, Cashew, Cranberry, Capers
Option 1 Hot Side
- Preheat oven to 180°C
- Remove lid from cauliflower tray and roast for 10 minutes until warm
- To plate, smear cashew cream on bottom of serving plate. Place cauliflower on top. Add cranberry and cashew mixture
Option 2 Cauliflower salad
- Place cauliflower in large mixing bowl
- Add a little olive/vegetable oil to cashew cream to create dressing.
- Mix dressing and cashew cranberry mixture into cauliflower.
- Transfer to serving plate or bowl
